Ragi Biscuits

RAGI BISCUITS
Ingredients:
Raagi(Finger millet) flour - 1/2 cup
All purpose flour - 1/2 cup
Powdered sugar - 1/2 cup
Butter - 1/2 cup
Cardamom powder - 1/4 tspn
Baking powder - 1/2 tspn
Milk - 2 tblspn
Chopped nuts to garnish

Method:
- Roast raagi flour for about 5 minutes till you can smell the aroma of raosted raagi.
- Whisk butter and sugar till creamy.
- Mix roasted raagi,all purpose flour, baking powder and cardamom powder well.
- Stir in the dry ingredients to the butter-sugar mixture.
- Mix to make a soft dough.
- If you find the dough dry, add about a teaspoon of milk.
- Pinch off a lemon sized dough.
- Shape into a ball and flatten a bit. garnish with chopped nuts.
- Press it down using a fork.
- Bake in a preheated ovenTemp -180 C Time - 30 min

Black Forest Cake

BLACK FOREST CAKE
Ingredients:
Flour - 3/4 cup
baking powder - 1/4 tsp
sugar (powdered) - 1 cup
cocoa powder - 4 tsp (heaped)
eggs - 5
vanilla essence - 1 tsp
soda powder - 1 cup + 1tbsp
cream - 200 gms
icing sugar - 4 tbsp
cherries - 1 small tin
Rum - 2 tsp
syrup of cherries - 1/2 cup (comes along with the cherries tin)
sugar - 2 tbsp (for mixing the syrup)
water - 1/2 cup
grated chocolate - 1/2 cup

Method:
- mix flour, baking soda, baking powder and cocoa powder well
- seive the flour thrice
- in a bowl break open the eggs, beat them using a electric beater, until fluffy
- then add the powdered sugar little by little and beat the egg mixture until the mixture is pale and fluffy.
- add the vanilla essence to the mixture and mix well
- now add the flour mixture little by little and fold them in without any lumps (preferably in one direction)
- check if there are any lumps
- then preheat the oven at 180 degrees for 10 mins
- in a baking tray add a drop of oil and spread them
- place a baking sheet (butter paper) and pour in the mixture, until the mixture is 3/4 full
- bake for 30 mins in 180 degrees
- remove and allow it to cool
- remove the baking sheet
- cut the cake into two halves.
- it should look like the sandwiches, two layers
To make the frosting:
- cut the cherries into fine slices after removing the seeds
- mix water, cherry syrup, rum, powdered sugar and pour them on both the cake layers
- now beat the crean and icing sugar until they form peaks
- the important part of this cake is that the lower layer of the cake should come on the top after the cream is applied
- so start spreading the cream on the upper layer (which will go down after the icing)
- add the sliced cherries
- close the cake with the lower layer of the cake (which will come on top now)
- apply the cream on all the sides and top of the cake
- cover the cake with the grated chocolate on the sides and on the top
- then place 2 - 3 full cherries as decoration.To serve:
- after the icing is done, place the cake in the fridge over night and serve cold.
Do not leave the cake out in room temperature for too long, as the cream will melt.

Double Decker Cake

DOUBLE DECKER CAKE
Ingredients:
Plain cake - 1
Chocolate cake - 1
For the butter icing:
icing sugar - 3/4 cup
butter - 1 cup
chocolate essence - 1 tsp
cocoa powder - 4 tsp
instant coffee powder - 1/2 tsp

Method:
To make the icing:
- beat all the ingredients for the icing for 5 minutes

To make the cake:
- take the plain cake and the chocolate cake in the same size and in the same quantity
- place the chocolate cake as the bottom layer.
- the give a thick icing in the middle and place the plain cake on top
- cover the entire cake with the rest of the icing.
- serve

Choco Chip cake

CHOCO CHIP CAKE
Ingredients:
Butter - 250 gm
Sugar - 250 gm
maida - 250 gm
baking powder - 3/4 tsp
baking soda - 1 pinch
vanilla essence - 2 tsp
eggs - 3
choco chips - 1/2 cup

For baking:
butter paper - 1 sheet
Butter for greasing - 1 tsp

Method:
Preparation before making the batter:

- grind the sugar in a mixer grinder to a fine powder
- seive maida, baking powder and baking soda atleast thrice
- leave the butter in the room tempertaure for more than 3 - 4hrs
- the butter has to be soft
- beat the eggs until they form a froth

To make the batter:

- in a big bowl mix sugar powder and butter until they form a fine and a smooth paste
- this mixing will take upto 15 - 20 mins by hand
- when you use a food prcessor, might take 3 - 4 minutes
- now add the maida powder spoon by spoon and mix in one direction
- this is the most important step while making the batter as you wil have to decide which direction is most comfortable for you.. it could be clock wise or anticlock wise
- stick to the same direction
- so mix the maida to the batter and add the beaten eggs as well in between
- continue the same process until you end with all the beaten eggs and the mixed maida
- this will make a batter which will look like a idli batter
- add the choco chips and mix well
- add the vanilla essence and mix well for 3 - 4 minutes

To grease:

- if you are using a non stick baking bowl then grease them only with butter and then dust them with some maida
- but if you are using an aluminium bowl for baking then spread the butter paper and then grease them with butter. Then dust them with maida
- Pour the batter in the greased bowl and tap them on a surface to make a equal level of the batter on all the sides of the bowl

To bake:

- preheat the oven in 170 degrees for 10 minutes
- then place the baking bowl in the oven and now bake them at 170 degrees for 25 minutes
- the cake will be fully done and will be golden brown

To serve:

- do not remove the cake from the bowl immediately when you take the baking bowl from the oven
- leave them to set to room tempertaure for 1/2 an hour to 45 mins
- then close the bowl with a plate and turn the bowl upside down for the cake to sit on the plate
- if you have used the butter paper, now slowly remove them from the cake and they will be easy to remove after they set to room temperature.

Marble cake

MARBLE CAKE
Ingredients:
All purpose flour- 2 cups
Baking powder- 1tbsp
Eggs- 4
Granualated sugar- 1cup
Sunflower oil- 1 cup
Milk- 1 cup
Vanilla essence- 1tsp
Cocoa powder- 2tbsp

Method:
-Combine sugar and eggs and beat till it becomes creamy.
-Then add Milk and oil and beat again.
- Then add the sieved flour and baking powder and mix well .
- Add the essence.
- Divide the batter in two equal portions.
- Add cocoa powder in one portion , the other kept as it is(plain)
- Now in a baking pan, add a scoopful of plain batter and the chocolate batter next to it.
- so one scoop of white batter and one with cocoa batter.
- when its one layer, now give the contrast colour over in the second layer, i.e . on top of the white batter pour cocoa batter and vice versa.
- Repeat the procedure with rest of the batter.
- Bake in a preheated oven at 180c for 30 minutes.

Ingredients:
All purpose flour- 2 cups
Baking powder- 1tbsp
Eggs- 4
Granualated sugar- 1cup
Sunflower oil- 1 cup

Vanilla essence- 1tsp
Cocoa powder- 2tbsp

Method:

Swiss Roll

SWISS ROLL (MICROWAVE)
(Jam Roll)
Ingredients:

flour - 1 cup
powdered sugar - 1 cup + 1 tbsp
baking powder - 1 tsp
jam - 100 gm
cornflour - 2 tsp
eggs - 3
vanilla essence - 1 tsp
Baking sheet - 1/2

Method:
- remove 2 tsp of flour from 1 cup
- substitute 2 tsp of flour with 2 tsp of corn flour
- this will make the roll softer
- seive flour + cornflour and the baking powder thrice
- leave them aside
- break the eggs in a bowl and beat them- add the powdered sugar little by little and beat them until the egg is pale and fluffy
- add the vanilla essence and beat again
- add the flour mixture little by litte and beat
- beat them preferably in one direction and mix all of them
- do not over beat the mixture after the flour is added- preheat the oven in 180 degrees
- then grease the pan with oil and then place a baking sheet in the baking tray
- pour in the mixture until they are 3/4th of the tray
- bake at 180 degrees for 15 - 20 minutes
- check if the tooth pick which is inserted comes out clean
- then spread a baking sheet
- sprinkle 1 tsp of powdered sugar
- remove the cake and spread them on the sheet while the cake is hot
- now spread in the jam evenly
- roll the cake with the jam
- roll the baking sheet as well on the rolled cake
- pack them tightly and allow them to cool
- now when they are cool remove the baking powder
- and slice them into 2" cake slices

variation:
Any jam can be used of your choice.

Rich Plum Cake

RICH PLUM CAKE (MICROWAVE)
Ingredients:-
Dates - 3 cups

Raisins- 2 cups
Cherries(Preserved in Indian way)- 2 cups
Broken Nuts-2 cups
Orange & Lemon Peel- 1/2 cup
Tutty Fruty - 1 cup
Rum - 1/2 cup
All Purpose Flour/Maida - 2 cups
Powdered Sugar - 3 cups(1 cup for caramalizing the sugar)
Butter - 250 gms
Baking powder - 2 tsp
Eggs - 6
Vanilla Essence - 2 tsp
Salt - a pinch( to adjust the sweetness)
Powdered Spices - 3 tsp(Cardamom,Cloves,Cinnamon,Nutmeg,Dry ginger)
Orange juice - 2 tbsp

Method:-
Soaking Method:
Chop the fruits fine.Soak them in the alchohol along with nuts and peels and keep in an air tight container for a couple of week.(I soaked for 1 month).
Caramelize 1 cup of Sugar.
It can be done by heating a medium sauce pan with 1 cup of sugar and 1 tbsp of water.Stir in continuosly and use only medium heat.The sugar will melt first,then gradually becomes a molten syrup.As it gets hotter,it’ll turn into a dark colored caramel syrup.Now slowly add 1/2 cup of water and stir well immediately before it crystalizes back.(Be careful while doing it,for it can splash and may cause severe burns.).Stir it well to dissolve completely and allow it to cool.
- Preheat the oven to 180 degree
- Sift the baking powder and flour well, thrice
- Now mix the powdered spices and the soaked fruits to the flour.
- remove the alcohol if theres any, seperately.
- Mix well with a spatula and keep aside.
- Beat butter and powdered sugar till light and fluffy.
- Now add the eggs one at a time to the beaten sugar butter mixture with a teaspoon of flour after each egg.
- Beat well.
- Add the flour mixture alternatively with the cooled caramel and fold in.Remember do not whisk,this can break the fruits.
- 8.Lastly add vanilla essence ,orange juice and 1 tsp of brandy.
- Mix everything well using a wooden spatula preferably to one side.
- Pour it into greased / baking paper coated baking tray
- Bake it in the oven for 45 minutes
- Check by inserting a tooth pick and if it comes out clean ,the cake is done.
- If its not done reduce the heat to 150 degree and bake for another 10- 15 mts or until done
- When the cake is baked,remove and immediately sprinkle 1 tbsp of rum over it.
- This can enhance the flavour and increases its life span.

Dhoodh Peda

DHOODH PEDA (MICROWAVE)
Ingredients:

Condensed Milk – 1 tin
Milk Powder – ¾ cup
Unsalted Butter – 4 tbsp
Cardamom Powder – ¼ tsp

Method:

- Put butter in a microwave safe bowl and keep it in the oven and microwave at 100% power for 15 seconds.
- Remove from the oven and mix milk powder, cardamom powder and condensed milk in that bowl and mix well.
- Place the bowl in the oven and microwave high for 5 minutes. (it took exactly 5 minutes in my oven and the time differs depending upon the capacity of every oven).
- At a regular interval of 1 minute, remove the bowl from the oven and mix the ingredients in the bowl well and place in the oven. - Let the mixture to cool after it is finished cooking.
- Grease your hands with a little of ghee and take a small ball of mixture and shape the pedas in your desired shape.
- Delicious Doodh Peda is ready to serve just in 5 minutes!

Eggless Chocolate Cake

EGGLESS CHOCOLATE CAKE (MICROWAVE)
Ingredients:
flour - 1 + 3/4 cup
sugar - 1 cup (powdered)
cream - 3/4th cup
curd - 3/4th cup
coffee powder - 1 tsp
cocoa powder - 3 tbsp
baking powder - 1 tsp
baking soda - 1/2 tsp
Method:
- mix baking powder, baking soda, flour, coffee powder and cocoa powder together
- seive thrice
- beat the cream and curd until fluffy and froathy
- add sugar and beat well for 2 - 3 mins
- add the flour little by little and mix well
- mix well until all the flour is blended into the mixture
- grease a baking tray and pour the batter until it covers 3/4th of the tray
- (I poured more than 3/4 of the tray and you can see the cracks on the cake)
- preheat the oven at 180 degrees
- bake the cake at 180 degrees for 30 minutes
- remove from mould and cool
- serve

Cream Chicken Tikka

CREAM CHICKEN TIKKA (MICROWAVE)
Ingredients:
Boneless chicken - 1/4 kg
fresh cream - 2 tbsp
fresh thick curd - 1 tbsp
salt to taste
olive oil - 2 tbsp
garam masala - 1/4 tsp
pepper powder (white) - 1/2 tsp
ginger garlic paste - 1 tsp
tandoori colour - 2 pinches
red chilli powder - 1 tsp

Method:
- mix all the ingredients to the cleaned and washed boneless chicken
- leave them in the fridge overnight
- spread them on a grill tray on a preheated oven
- grill them at 220 degrees for 15 minutes
- now turn them to the other side and then grill them for another 15 minutes
- serve them with rice or as a starter
- sprinkle some lemon juice before serving.
